Mara Valpolicella Ripasso is an Italian blend of Corvina, Rondinella, and Molinara. Ripasso is the term for the double fermentation technique used to give more body and flavor to the basic wine. The Valpolicella is fermented with the partially dried grape skins that have been left over from fermentation of Amarone. Mara Valpolicella Ripasso is aged in oak for 12 months.
This ruby-colored Valpolicella is scented with blackberry and light wood notes. The flavor expresses prunes and dried cherries in a light to medium-bodied mouth feel. The tannins are supple and overall this wine articulates a subtle charm. It paired very well with pizza. Our only criticism is an abrupt finish.
